Shake Shack, Red Door Woodfired Grill, Starbucks and Bibibop Asian Grill have been named as the next four retail establishments heading to Drake Development's Streets of West Pryor in Lee's Summit, Mo.
The two most recent additions, Shake Shack and Red Door Woodfired Grill, received preliminary plan approval from the Lee's Summit Planning Commission yesterday (December 10, 2020).
Construction on the Starbucks and Bibibop Asian Grill is complete - pending tenant finishes - and both plan to open Q1 2021, while the drive-thru Shake Shack and Red Door Grill are expected to begin construction Q1 2021 and open in late 2021.
"The City of Lee’s Summit has been great to work with and has been very understanding and open-minded about the current challenges facing restaurants. Many of the present challenges are causing fundamental shifts in how restaurants operate their businesses which has impacted their physical footprint and store layout to respond to the demand for off-premises consumption. We’re seeing concepts that never previously considered a drive-thru as a necessity, now requiring a drive-thru at all new locations. These rapid changes require a team approach from the tenant, developer and city to ensure an outcome that works for all parties," said Ian Mussman, director of sales with Drake Development.
Anchored by McKeever's Market, which opened in September 2020, the $178 million, mixed-use development also includes First Watch, Supplement Superstore and Firebirds Wood Fired Grill - all now open for business.
Construction continues on the 235, one-and-two bedroom Summit at West Pryor apartment complex, scheduled to be complete in May 2021.
Phase 2 of the development includes a 185-room senior living facility with an inclusive 88-room hotel and a revised preliminary plan to include 83 townhomes (in place of the previous 2018 plan of 29 single-family residential lots).
